Tuesday Breakfast: The Mexican Flag Omelet

Tuesdays, unless I’m working, I usually take the time to whip up a two egg omelet, with lots of veggies. Topped with salsa and cheese, this is one of my favorite breakfasts. The salsa tends to come from a local Mexican food chain, Taco Cabana, which is one of my food “vices.” They do, however, produce an excellent selection of red, green, and brown salsas in a town that’s got rugged competition in this category. Hence, the name “Mexican flag omelet.” The usual vegetables tend to be red and green peppers, onion, spinach, tomatoes, mushrooms, and a bit of cumin sprinkled on top.
