			<content:encoded><![CDATA[<p>Once I figured out a better way to eat oatmeal (the less processed way), it was time to turn my attention to cold cereal, since I&#8217;ve eaten that for breakfast for almost all my life. Of course, my taste in cereals has changed from the excessively sugared ones the food industry has endlessly marketed to kids for the past 40 years or so, to the less sugared &#8220;healthy&#8221; ones that have been produced lately, in response to people&#8217;s desires to eat healthier.  However, we&#8217;re still stuck with the same paradigm: more processed food, more &#8220;value&#8221; added, too much of certain ingredients, preservatives, bogus or misleading labels.  Oddly enough, it&#8217;s really hard to find simply processed grain turned into cereal (buying simple oats is a breeze; most stores have them), and so I embarked on a little survey around the internet and my local stores, to find very little options.  The one that did stand out, after searching was Uncle Sam&#8217;s Original Cereal.  The ingredients are simple: rolled wheat flakes and flax seeds, salt, Barley malt, and Niacin plus a couple of others that seems to be required (vitamins B12, B1).  Compared to some of the more processed cereals, this is as simple as I can get it.  It has 10grams of fiber and only one gram of sugar. Now, the taste of this is, shall we say, kind of unfamiliar if you&#8217;re used to a bunch of sugar and other flavorings, but this cereal makes a good base if you want to mix it with some granola or nuts or perhaps other ingredients to taste.</p>
